Production

Quality milk is at the roots of any good cheese.

Unpasteurized milk used for the production of our in-house chesses (Reblochon AOC, Abondance AOC, Bleu de Terramont, Ballavaud, Petit Salève) originates exclusively from the dairy of Fillinge.

The richness and diversity of Alpine pastures provides our milk with extraordinay aromatic and nutritional quality that ends up in all our cheeses.

Cattle feeding is exclusively made of herbs, hay and grains (GMOs excluded).

Thanks to responsible farming practices, that does not primarily seek yields but rather quality, milk coming from the surrounding moutains is doubtlessly top notch. As a result, we are in a position to offer our customers with a end-product that procures a unique taste and a remarkable nutritional quality.

Other cheeses we sell (Reblochons fermiers, Tommes, Chevrotins, Beaufort, Emmental, Comté, Mont d’Or, Morbier, Raclette…) are all supplied from local producers we have selected rigorously across Haute-Savoie, Savoie and Switzerland.
